The oldest “star” of Liget Royal Restaurant is Veal tongue with wild buns – Part 11
Our series presenting the “stars” of the permanent menu of Liget Royal Restaurant in Hévíz is slowly coming to an end. The last of the main dishes is Veal tongue with wild buns, but as they say, it is by no means the last, because it is a true icon – says Tamás Bódis, the chef of Liget Royal Restaurant, about the speciality available at their restaurant.

- Veal tongue with wild buns is one of our iconic dishes, which has perhaps been adorning permanent menu of the
Liget Royal Restaurant for the longest time. Offal used to be present in every restaurant's menu, but recently, somehow, as if we had forgotten about them, it simply went out of fashion. Many people love these gourmet snacks, and let's face it, these are dishes that we rarely prepare at home anymore. However, we would like to bring these forgotten flavors back to
Liget Royal Restaurant.
- Veal tongue, as an ingredient, is already a curiosity in itself, served buttery soft, a special snack in a richly flavored sauce, which provides a magnificent base for the meat with both its color and fullness. The sauce, richly flavored with pickled vegetables, with its pleasantly mustardy taste, cannot be said to be boring in the least, as can the napkin dumplings served on the side. The latter is also among our rarely served side dishes, although it is a perfect match for sauce-based dishes, but especially for game sauce. This dish is definitely worth trying, of course at the
